Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • Add the vegetable oil and eggs to the dry ingredients and mix until well combined.
  • Fold in the grated carrots and chopped walnuts.
  • Pour the batter into a greased cake pan.
  • Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This carrot cake is perfect for any occasion. You can also add a cream cheese frosting for extra flavor.
