Ingredients
  

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 800 g canned tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Add canned tomatoes, vegetable broth, dried basil, and dried oregano. Bring to a boil.
  • Reduce heat and let it simmer for 20 minutes.
  • Use a blender to puree the soup until smooth.
  • Season with salt and pepper to taste.

Notes

For a creamier texture, add a splash of heavy cream before serving.
