  • 2 tablespoon Olive Oil
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 medium Carrot diced
  • 1 medium Zucchini diced
  • 1 can Crushed Tomatoes 400g
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 cup Vegetable Broth
  • 1 package Pasta your choice
  • to taste Salt and Pepper
  • 1 handful Fresh Basil chopped, for garnish

Instructions
 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the onion and garlic, and sauté until softened.
  • 3. Add the carrot and zucchini, and cook until they start to soften.
  • 4. Stir in the crushed tomatoes, tomato paste, dried oregano, and dried basil.
  • 5. Pour in the vegetable broth, bring to a simmer, and cook for 20 minutes.
  • 6. Meanwhile, cook the pasta according to the package instructions.
  • 7. Season the sauce with salt and pepper to taste.
  • 8. Serve the sauce over the cooked pasta and garnish with fresh basil.
